INGREDIENTS:
22 oz. Bread Flour
1 1/2 oz. Granulated Sugar
3/4 oz. Salt
3/4 oz. Yeast
22 oz. Warm Water
6 oz. Olive Oil
3 oz. Diced Kalamata Olives
3 oz. Caramelized Maui Onions
1/2 tsp. Rosemary
1/2 tsp. Thyme
METHOD OF PREPARATION:
Mix all ingredients for 8-10 minutes until smooth. Cover with plastic wrap and let rise to double in size. Punch down and scale:
10 inches = 4 oz. Yields 16 rounds
Pre bake at 350 degrees until slightly brown on sides. Brush pizza dough lightly with olive oil on both sides and heat on grill. Mix together your favorite pizza sauce and lilikoi syrup to taste and spread on pizza dough.
TOPPINGS:
Sprinkle 3 oz. Mozzarella Cheese, 3 oz. Goat Cheese and 1/4 of a Tomato (julienne) and torch until cheese is melted. Finish by topping with pulled pork.
