Seafood Laulau

INGREDIENTS:
2 pcs. Scallops
3 oz. Fish
3 pcs. Shrimp
1 tsp. Sherry Wine
1 tsp. Worcestershire Sauce
Half Kumquat Skin
Half Lemon Juice
2 tsp. Mayonnaise
3 pcs. Romaine
Pinch Green Onions
Pinch Ginger (Minced)
½ tsp. Fish Bouillon
To Taste Salt and Pepper
3 pcs. Ti Leaf (Substitute with foil)

METHOD OF PREPARATION:
Mix the following ingredients in a bowl: mayonnaise, sherry wine, kumquat skin, lemon juice, worcestershire sauce, ginger, green onions and fish bouillon. Add scallops, fish and shrimp and add salt and pepper to taste. Wrap mixture in whole leaves of romaine lettuce. Wrap entire pouch with ti leaves or foil. Steam for 12 - 15 minutes.
